Thin Mint Shamrock Cupcakes

I am having one of those days here. Another run to the dr. with a sick child is on the horizon and we need groceries. But until then, we still have about 6 boxes of Thin Mints! So, here is a fun little St. Patrick's Day recipe....

Drop a thin mint into the cupcake liner - fill with cake batter, about 1/2 full. You can do more batter, but mine always overpuff, so I keep them "short." I used a little green food color in the buttercream - here is what the cupcake looks like inside.....

I gave some as a gift, so I put a whole cookie on top, (a cupcake and 2 cookies, what could be better??) but just a few crumbles or half a thin mint would be cute, too.

All that green reminds me that soon, hopefully very soon, spring will arrive!
