I had some leftover Andes baking bits from Christmas (when stored in the freezer they will keep for months), so decided it would be a good time to use them.
Here's what to do....
-Bake up your favorite brownie via mix or your own recipe.
-Add bits to the batter if you want to (I didn't because wasn't sure if everyone wanted the minty taste)
-While brownies are cooling, mix up 2 cups powdered sugar, 4 oz cream cheese, 4 tbsp butter and enough milk to make it spreadable. Use green for tinting to your desired shade.
-Sprinkle liberally with Andes bits!
These brownies will need to be stored in the fridge due to the cream cheese and butter icing.
YUM...obviously, since your family is entirely biased with regard to Irish things, you'll need someone who is not hindered in that capacity to "taste test" them. And, who better than someone who is not Irish...ME??!! Love, mom
